Do I really need a separate sound person?

For anything with dialogue, yes. On-camera microphones are adequate for atmosphere and inadequate for someone speaking. It is the single highest-return addition to a small crew.

Can bad audio be fixed afterwards?

Some of it. Noise, hum and level problems can often be improved. Echo from a hard-walled room and clipped distortion largely cannot — those are recorded into the file permanently.

What about music — can they supply it?

Many sound designers have licensed libraries or compose. Establish in writing that you have commercial rights to whatever is used, especially for anything running as advertising.

Is sound design relevant for podcasts?

Very. Editing, levelling and a consistent mix are most of what separates a podcast people finish from one they abandon in the first minute.
